Red Potato Casserole

6 large or 10 medium red potatoes

1 16 oz. container sour cream

1 stick butter

8 oz. grated cheddar cheese

3 or 4 green garden onions(finely chopped)

Salt and pepper to taste

Boil potatoes until tender with skins on them.  Let partially cool.  Grate potatoes with a coarse grater in a large bowl.  Add all other ingredients and mix well.  Bake at 350 degrees until hot and bubbly.  This recipe can be made a day ahead and heat before you are ready to serve.
